Cowboy Steak

Cowboy Spiced Rubbed Rib-Eye

The Rub
2 TBL Fresh Ground Cumin 1 ½ tsp Hungarian Sweet Paprika
1 TBL Dried Oregano 1 TBL Kosher Salt
1 TBL Coarsely Ground Black Peppercorn 1 TBL Brown Sugar
1 tsp Cinnamon 1 TBL New
The Sauce
4 TBL Olive Oil 1 ½ tsp Minced Shallots
2 TBL Unsalted Butter 1 TBL Kosher Salt
½ Cup Heavy Cream 1 TBL Fresh Ground Pepper
1 Cup Cognac 1 Clove Garlic (minced)
Marinate steak with rub, olive oil and press in kosher salt and cracked black pepper and allow sitting for 1 or more hours. In a saucepan, add all the sauce ingredients and let simmer. Grill steaks about 3 minutes each side. For the last 2 minutes on each side dip steaks into sauce pan covering steak with sauce. Return to grill for the finishing touches. Let rest 3 minutes before serving.
