Grilled Cheese Sandwich with Fiscalini Cheddar
We discovered this fantastic farmstead cheese company recently and were blown away with the quality and freshness of the cheese they craft. We recently served Fiscalini cheese at a JCC FLIGHTS Wine Club event and everyone absolutely loved this pairing. Specifically, we served the Bandaged Wrapped Premium Reserve Cheddar and the San Joaquin Gold. Both were excellent with our bold red wines and will definitely be on our menu again. This past May, their Lionza cheese won Best of Show at the California State Farm by unanimous decision of 8 judges! The Ex Mature Bandaged Wrapped Cheddar captured the gold medal at the 2007 World Cheese Awards in London,the first cheese outside of the UK to ever do so.

San Joaqiun Gold Grilled Cheese Sandwich
FOR 2 SANDWICHES
4 slices bread, sour dough or multi-grained
6 slices of thinly sliced San Joaquin Gold cheese
Heat frying pan over medium-high heat. Place sandwich in pan and turn when the bottom slice becomes brown, and cheese starts to melt. Remove when both sides are toasted lightly brown and the cheese has evenly melted. Serve with tomato soup or with fresh sliced tomatoes.
* Try adding a sliced fresh tomato to the sandwich - either before or after grilling. Also yummy would be grilled bacon or canadian bacon.
