Lunch Brunch Scramble
This is a delicious recipe from Fiscalini cheese company - lots of flavor and perfect for your afternoon brunch!! Add some fresh fruit, topped with a dollup of fresh vanilla yogurt and you are set!
Fiscalini Lionza Brunch Scramble
5 strips bacon, cooked and diced
1/2 C cooked fresh spinach, chopped
1 small tomato, diced
3 TBS red onion, diced
1/2 C Fiscalini Lionza cheese, grated
6 Eggs
Fry the bacon until crispy, then dice. Combine the egss and all other ingredients including the bacon in a bowl and whisk. Scramble the egg mixture in a buttered frying pan, then salt and pepper to taste. Serve with toast or croissants.
